Each color should have a separate URL and page — but the canonical URL should point to the main page. This way Google boosts the main page in rankings and sees the auxiliary pages as linked.

Ive been dealing with this for a long time. Start with a small trial; dont commit to everything at once.

Everyone rushing into product variant pages gets stuck at the same point... tbh i'm also curious if anyone does it differently.

The answer above hits the nail on the head. When we decide without measuring, we always end up in the same place.
