My bakery only makes money during Ramadan and holidays — how many years will my savings last with no income for nine months?

i'm a pastry chef i own my own shop in ankara. i make so much money during ramadan and holidays that i coast for the other 9 months of the year. tbh but this year i got this idea: 'hey, fill the year, make other products.' i thought i'd add extras like pita desserts bulk sales and cake gift baskets.

then i thought like a sensible person: 'can i make a contract with catering companies?' i called a catering firm, they said 'we want to buy desserts for 100 people weekly.' i said okay, gave a price. but 3 weeks later the catering engineer said, 'bro, this dessert has to be made differently, your oven capacity is insufficient.' i bought 2 electric ovens cost 8k TL. the engineer said 'nope you still cant do it!'

i feel completely screwed right now. btw oven capacity is the core of the business and i didnt understand that. currently the oven runs with 20 people during ramadan and 2 people at other times. even if the oven ran 24 hours, capacity sometimes just isnt enough.

i dropped the catering deal, wrote it off as a loss and went back to 'don't even try' mode. but i learned this in the process: you can do the cake business off-season, but you need a partner or you have to do online sales (and shipping). i don't have a partner and haven't learned online sales. like now i have a question in my head: should i get a partner or should i just eat shit until ramadan?

Data analysis: as demand increases, capacity often drops by 30-50%. that's your situation. you need to increase capacity.

Procedure: first create a written policy. have the customer sign it. then implement it.

start with this structure: make the customer understand 'this is how i'll do it,' then do it. good luck.

Management perspective: measure capacity, measure demand, if there's a gap, find a partner or hire staff.

It's rare to find an explanation this clear.

let me summarize the topic since several different answers were given. delying bad news is the habit that causes the most losses in this job.

im also curious if anyone does it differently.

I was thinking the same thing. Pausing growth to breathe is also a strategy, nobody says that.

I'm also curious if anyone does it differently.

Let me summarize the topic, since several different answers were given. If you don't write this down from the start, it leads to arguments later.

Good luck with that.

I was thinking the same thing. Looking profitable on paper but having no cash in the bank is very common.

Taking notes for two weeks yields better results than a six-month estimate.

The answer above hits the nail on the head. Extending terms makes customers happy but turns you into a financing institution.

If you have questions, write them; I'll answer as best I can.

My perspective changed after experiencing that. Solutions that work at a small scale collapse when you grow; I learned this late.

I completely agree. The reason for failure isn't one big mistake but the accumulation of small decisions.

My questions are cleared up, thanks. Hasty decisions become decisions you have to fix six months later.

Hope this helps.

Noted, thanks. The biggest time-waster for us was not knowing who had the final say.

Any unwritten clause becomes a point of disagreement later, as both sides remember it differently. Good luck with that.
