Orders at my print shop are always late — client says 'deliver on Monday' but I deliver on Friday — is the planning wrong, or is capacity insufficient?

i run a print shop, for 20 years. people who come to us are usually in a rush: they come in saying 'i need 5000 flyers by monday morning'. when i read the specs i say 'friday morning', and they say 'ok'. but on friday the rough estimate says 'it's probably 4500 not 5000'. and when the client comes, can't they get angry?

here's the issue: i take an order shut down the machine and start, but in the middle one of the machines might break. in the middle, ink toner etc. runs out there's a supplier issue. i tell the client 'tomorrow' but they come 'today' because the client is in a rush. in this situation how do i plan capacity? should i add an extra 20% time buffer, or should the client wait?
