i'm a tire guy, another tire guy wants to partner up. he's a good guy but if he doesn't do accounting, what happens to me? whose customers are they? who sets the prices?

I think it's hard to be that definitive about tire shop partnership. If you're offering equity instead of salary, also state what you're offering in return.

I'm also curious if anyone does it differently.

The cheap-looking path usually ends up costing more later. Valuation methods for exits must be defined by formula; "market value" isn't enough.
